Briyani Brinjal / Bagara Baingan / Briyani Kathirikkai / பிரியாணி கத்திரிக்காய்

brinjal small - half kg
chopped onion  big -  1
green chilli splitted - 2
curry leaves - few
sliced garlic cloves - 5
chopped coriander - 2  tbsp
soaked tamarind - lemon size in one cup water.
turmeric powder - 1/4 tsp
oil - 75 - 100 ml
mustard & urad dal - 1 tsp
sugar - 1/2 - 1 tsp
salt - to taste.

to roast and grind :
red chilli - 4 or more ( it depends)
coriander seeds - 2 tsp
channa dal - 2 tsp
sesame seeds - 2 tsp
peanuts - 2 tsp
fenugreek, pepper & cumin seeds  - each quarter tsp

Steps to follow:
Wash, remove the stem of brinjal and split cut it and keep aside.
 Roast the given ingredients above with little oil, grind and keep aside.
In a heavy pan heat oil add mustard & urad dal and  add curry leaves  when it pops add garlic slices.
 Stir well.
 Add sliced onions and saute well.Add little salt to taste.
 Add the brinjal and green chillies, saute again.
 Leave it in a low flame until cooked soft.
 Add turmeric powder and mix well.
 Extract the tamarind juice and add. Let it cook for another 5 minutes in a medium flame.
Then add the ground powder and mix well.
 If need water add quarter cup and again cook in a low flame till oil oozes out.Check the salt, add sugar and mix well.
 Add chopped coriander,switch off.
Mix and transfer to a bowl and serve with Briyani or Pulav. Enjoy !
