Brinjal Masala / கத்திரிக்காய் மசாலா

Ingredients:
brinjal - 250 gm
oil - 1 tbsp
mustard & urad dal - 1 tsp
curry leaves - few
asafoetida - pinch 
sambar powder - 1- 2 tsp
coconut grated - 2 tbsp
salt - to taste.

Steps to follow:
Wash & cut the brinjal into small pieces.
Microwave for 2 minutes.Keep aside.
Heat oil in a pan add mustard & urad dal when it pops add curry leaves, asafoetida, then add brinjal pieces and salt to taste.Stir well.
Add sambar powder and stir in a low flame for 2 minutes
Add grated coconut, mix well and serve with rice varieties.
