Pumpkin Soup / பூசணி சூப்

This soup is  light, creamy and tasty and it makes a wonderful warming first coarse.
grated pumpkin - 1 cup
chopped onion - 1
chopped green chilli - 1
chopped garlic - 1 tbsp
chicken soup cube - 2 or to taste
water - 1 litre
oil - 1 tbsp
freshly ground pepper - to taste
chopped coriander leaves - 1 tbsp ( optional)

Serves - 2-3 person.

Steps to follow:
grate the pumkin pieces, chop the onion,gralic and green chilli and keep aside.

 In a electric rice cooker heat 1 tbsp oil add chopped green chilli,garlic,and onion. Saute well.

 Add grated pumpkin  and saute again.

 Add soup cubes and 1 litre water and bring to boil.
 Close with lid and cook for 10 minutes. Switch off.

Using hand blender,  blend the soup till it mashed well.

 Add freshly grounded pepper .

 Serve immediately in an individual bowl.
Today my family enjoyed this awesome soup. Hope you would love it.
Serve garnished with coriander or parsley.
