Malabar Chicken Roast / மலபார் சிக்கன் ரோஸ்ட்

to marinate :
small chicken pieces( bone or boneless) - 200 gm
ginger garlic paste - 1 tsp
chilli powder - 1/4 tsp
turmeric powder - 1/4 tsp
coriander powder - 1/2 tsp
chopped green chilli - 1
salt - to taste.

to roast :
oil - 2 tbsp
big onion sliced - 1
chopped small tomato - 1
chopped green chilli - 1
curry leaves - few
garam masala - a big pinch 
freshly ground pepper - 1/4 tsp.

Steps to follow:
Wash thoroughly and drain the chicken pieces.
Mix the chicken with gg paste, chilli ,coriander & turmeric powders, green chilli and salt to taste. Marinate for at least 2 hours.

Heat oil in a pan fry the sliced onion till golden brown, drain and keep aside. In the same pan roast the chicken till done. Take and keep aside.

In the same pan add chopped tomatoes, green chilli and curry leaves, saute well, add roasted chicken and saute again, add fried onions and mix well.
Then add garam masala and freshly ground pepper to taste.Saute well and serve immediately.

Serve with ghee rice, briyani, plain rice  and sambar or any variety rice.
