Chicken Vindaloo / சிக்கன் விண்டாலு

A popular fiery dish from Goa, '' Vindaloo ''curry is made using unique blend of spices and vinegar to give it a different flavour and taste.

Chicken - 1 kg
onion - 2 large
ginger garlic paste - 2 tbsp
mustard seeds - 1 tsp
coriander powder - 1tbsp
turmeric powder - 1/4 tsp
Vinegar - 3 tbsp + 1 tsp brown sugar or powdered jaggery
oil - 1 + 2  +1  tbsp
salt - to taste

To roast & paste:
fenugreek seeds - 3/4 tsp
cumin seeds - 1 tsp
pepper - 1 tsp
red chillies - 4-6
cinnamon - one small piece
cardamom - 2

Steps to follow:
Roast the given ingredients with little oil and grind it.
Slice the onion and  sauteed in a tbsp of oil till caramalized ,cool and make paste.

Heat oil in  a vessel add mustard seed, when they pops add gg paste and saute for 2 minutes.
Add coriander powder,turmeric powder and salt. Add chicken pieces, saute and cook for at least 10 minutes in  a medium flame. Remove the chicken pieces and keep aside.
Again in the same pan add 1  tbsp oil, add brown onion masala paste  and saute for 2 minutes.
Add the jaggery and vinegar mixture and mix well. Add 1-2 cups of water and the browned chicken pieces, close  and cook till the chicken pieces turns soft and forms a thick gravy.
Serve hot with rice or rotis.
