Vegetable Sagu / வெஜிடபிள் சாகு

 This is flavourful and a lovely green curry made with mixed vegetables.


 Ingredients:
carrot - 100 gm
potato - 100 gm
green peas - 100 gm
cauliflower - 100 gm
(add vegetables as per your taste)
salt - to taste.

for tempering :
oil - 2-3 tbsp
mustard - half tsp
urad dal - 1 tsp
channa dal - 2 tsp
chopped big onion - 1
curry leaves - few

to grind :
grated coconut -  half cup
green chillies - 4
ginger chopped- one inch piece
coriander leaves - one handful
roasted channa dal(pottu kadalai) - 1 tbsp.

Serves - 4-6.

Steps to follow:
Wash, peel and cut the vegetables. Rinse once and drain  and keep aside.

 In a pressure cooker add all vegetables  with one cup water and salt to taste. Cook for 2 whistles.

 When pressure releases,  open it.
Grind nicely the grated coconut,green chillies, coriander leaves, ginger and roasted channa with little water and keep it aside.

 In a vessel heat oil add mustard seeds , when it pops add channa dal and urad dal,curry leaves and chopped onion, saute well.
 Add the ground paste.
 Add water as per requirement.
 Let it boil for few minutes.
 Add the cooked vegetables. Check salt to taste.
 Simmer the flame, let it boil for few minutes.


 Switch off the stove.Close with lid and open after 5 minutes.
Delicious vegetable sagu is ready to serve.  Here I didn't add garam masala or any masala powders but also it tastes Wow !
 Serve hot with Idli, dosa, roti varieties, poori or parota or hot rice.
