Vegan Veg Briyani


This dish is  made from everyday ingredients and extremely packed full of exciting flavours.
 Ingredients:
Basumati rice - 2 cup
Vegetables - 1 carrot, 1 potato and quarter cup green peas,( cauliflower, beans also you can add)
Oil - 100 ml or less
coconut milk - 1 cup ( optional) & 3 cup water
lime juice - 1 tbsp
Salt - to taste
chopped coriander & mint leaves - few.
To paste:
roughly chopped big onion 1
chopped ginger & Garlic -each  1 tbsp
chilli powder, cumin powder,coriander powder, fennel powder,garam masala  - each half tsp
turmeric powder - quarter tsp.

Steps to follow:
Rinse and soak the rice for half an hour.


 Paste the above ingredients and keep aside.Wash peel and chop the vegetables.
 In a heavy bottomed vessel or electric rice cooker heat oil, add the briyani masala paste stir for 2 minutes.

 Add vegetables and stir again.
Rinse the blender and add that water and cook the vegetables for few minutes.
 Then add 4 cups of water and salt to taste or add 1 cup coconut milk and 3 cups water.Adding coconut milk is optional.

 When it starts to boil add chopped coriander and chopped mint leaves.

 Transfer the rice. Mix and check the salt.Close and cook
Sprinkle with lime juice

 Cover  and cook the rice till done.Switch off or keep it in warm.Leave it for 15 minutes.

 Fluff up the rice with fork before serving.


 Vegan vegetable briyani is ready to serve.Serve with mint  thuvaiyal and potato chips.
