Party Chicken Fry

This  extremely popular south indian starter or side dish is easy to cook and tastes great.

for marination:
chicken pieces - 4 kg ( 40 - 50 pieces)
chicken 65 masala - 50 gm or 4 tbsp(maximum)
ginger garlic paste -2- 3 tbsp
lemon juice - 2 big or 4 tbsp
corn flour - 3 tbsp
egg - 2
orange food colour - 4 pinch (optional)
salt - to taste

oil  to fry- 600 ml

Serves - 20 -25  (depending upon your guests)
Steps to follow:
Clean and rinse the chicken pieces 3 times and drain the water, And again rinse with water and 1 tbsp turmeric powder.let it stand for few minutes.drain completely.Leave it drain  for at least 45 minutes - 60 minutes.

In a big vessel transfer the drained chicken pieces  add all the ingredients except oil. I used Achi chicken 65 masala.Mix well, check salt and spice.Marinate the chicken for at least 2- 4 hours. or If you prefer, prepare previous day and keep in fridge for over night.

 Before frying take the marinated chicken from the fridge and leave it outside for at least one hour.If any water in the marinated chicken,drain and mix again and keep it ready to fry.
 Heat oil equally in 2 big shallow fry pans, when it is hot put the chicken pieces carefully.
 Fry till both sides cooked and turn to golden brown.
 Drain the chicken pieces. Like this fry all the chicken pieces in 2 shift .
 Yummy party chicken fry is ready.
You can use this left over oil for fish fry or discard it.
Yummy party chicken fry is ready to serve.

Keep the fried chicken pieces in the hot pot covered by aluminium foil. You can serve this fry as starter or side dish.
