Party Chicken Fried Rice

No  Indian meal is complete without a rice or rotis. This chicken fried rice is most popular to serve rice in the party.
to marinate chicken
boneless chicken - 1 kg
ginger garlic paste - 2 tsp
thick soya sauce - 1tsp
corn flour - 2 tbsp
egg- 1
pepper powder - 1tsp
salt - to taste
Other ingredients:
basumathi rice - 1 kg
big onion - 1
green capsicum - 3
carrot - 3
cabbage julienne - 1 or 2 cup
light soya sauce - 3tbsp
oyster sauce - 1 tbsp (optional)
ajinomotto - 1 tsp
pepper powder - 1 tsp
spring onion - 5 numbers
oil - 100 ml
butter - 2 tbsp
salt - to taste.

Serves  12 - 15

Steps to follow:
Clean, cut the chicken into small pieces, rinse thoroughly and drain it.
Add the things to the chicken mention in the marination part and marinate for at least half an hour. Wash and finely cut the veggies and keep aside.
 Then in a heavy bottomed non stick pan add half of the oil  transfer the marinated chicken and fry the chicken pieces softly.Keep aside.
 Wash the rice and leave it to soak in water for 30 minutes.Drain the rice, cook with boiling water,add salt to taste and leave it cook for about 10 -12 minutes.Drain the rice and spread in the big  plate and keep aside.
 Heat the reamaining oil and butter  in the heavy bottomed vessel add chopped onion saute for one minute, add all cut veggies and saute well.
 Add pan fried chicken pieces and add the sauces  .Mix well. Adding ajinomotto is optional. Here you can add little salt and pepper to taste.
Transfer  the cooked rice.Mix the rice gently.
Finally add   chopped spring onion, mix and serve.
Transfer to a warm serving dish and serve at once. Enjoy the great taste !
When you make variety of dishes you can add this chicken fried rice to the  party.It tastes great and looks good. Especially kids would love to have this. Happy Children's Day.
