Muttai Kothu Parotta / Minced Egg Parotta

This is an easy tasty dinner recipe. You can make this yummy dish  with left over parottas too.

medium sized parotta -3
eggs - 2
oil - 2 tbsp
ghee - 1 tsp (optional)
chopped onion - 200 gm
chopped tomato - 100 gm
slitted green chillies - 2
ginger garlic paste - 1 tsp
garam masala - 1/4 tsp
chilli powder - 1/4 tsp
cumin powder -1/4 tsp
pepper powder- 1/4 tsp
turmeric powder - 2 pinch
salt - to taste
chopped coriander - to garnish

Serves - 2

Steps to follow:
Mince the parottas.
Heat oil in a heavy bottomed vessel add chopped onions,saute till light pink in colour,add gg paste saute well,then add tomatoes,green chillies sprinkle  little salt to taste  and cook till soft.
Then add all masala powders mentioned above  and again saute well. Add beaten egg and cook in low flame.Stir well.
Add minced parotta and mix well.Garnish with chopped coriander and serve immediately.

Back in action after your trip to India eh?
Nice use of left over parathas and can add grated carrot and thinly shredded cabbage for the Veg lovers.
