Sprouted Moong with potatoes and Moong Sprouts Samosa.

 Sprouted Moong with potatoes:
Ingredients:
moong sprouts 1 cup
boiled potato - 2
chopped onion - 1
chopped tomato- 1
chopped green chilli - 2
chopped garlic - 3
small piece chopped ginger
oil - 1-2 tbsp
jeera - 1tsp
hing - pinch
red chilli, turmeric,coriander and dry mango powder - each 1 tsp
chopped coriander leaves to garnish.
Steps to follow:
Boil the sprouts and keep aside.Peel and dice the boiled potatoes.
In a pan heat oil,add jeera,hing, when it splutters add chopped chilli. Add onions saute well and then add chopped ginger and garlic,saute again.Add tomatoes saute till slightly soft.Finally add diced potatoes and boiled sprouts and add all masalas.Sprinkle little water and stir gently and let it cook in a medium flame for few minutes. Add salt to taste. Mix well and add chopped coriander.
Serve hot with rotis. You can use this dish  as samosa filling also.

MOONG SPROUTS SAMOSA;
Ingredients:
Wheat or Maida - 1 cup
jeera - 1 tsp
Salt - to taste 
oil - 2 tbsp
water - needed

Filling :
Left over Sprouted Moong with potatoes.
Oil - for deep Frying.

Steps to follow:
In a bowl add salt flour,salt,jeera,oil and mix well.Add water slowly and make medium chappathi dough.It should be thick,cover and keep aside.
With dough make lemon size balls.Roll out each ball to big round chappathi shape.Cut into middle and resembles semi circle or half moon shape.Rub water slightly on the outer edges and fold,bring to middle and seal middle part till it resembles triangle shape.From open end fill this above mentioned filling and agaim sela with water and seal it.Do this with all the balls.
Heat oil in pan,fry the samosas till golden brown.Take and drain excess oil on kitchen paper and serve warm with chutney or sauce.
