Dal Palak

Dal, Spinach and traditional Indian spices are the main ingredients in this simple authentic recipe.

toor dal or moong dal or arhar dal - half cup
one big bunch - spinach leaves
turmeric,red chillies,amchur powder - each half to one tsp
salt - to taste
water - as required.
Wash the spinach leaves thoroughly  and cut nicely and keep aside. Soak the dal for one hour.
for tadka:
oil ghee mix - 2- 3 tbsp
jeera /cumin seeds - 1-2 tbsp
sliced onion - 1
chopped tomatoes -2
chopped green chilli - 1-2
chopped garlic -2 cloves
chopped ginger - 1 tsp
chopped spinach leaves
kasoori methi  1tbsp
asafoetida / hing - a pinch

Steps to follow:
 Pressure cook the soaked dal with enough water,turmeric powder and salt for 2 whistles.After pressure released, slightly mash the dal, add red chilli powder and amchur powder.Add the handful of spinach,mix  and keep aside.
In a pan heat ghee & oil mix add hing, jeera when it splutter add chopped onion ,stir fry for a minute,add chopped garlic and then ginger,stir fry,add green chilli and red chilli and tomatoes to the pan.Add a pinch of salt and mix well.
Toss the remaining spinach leaves and kasoori methi and fry it in the pan.Stir well.
Mix well.
 Now the tadka is ready and immediately transfer to dal mixture.Check the salt to taste. Adjust the consistency.Switch off the stove.
Mix and serve hot with roti or chappathi or even rice.

Dal looks delicious! Shall try this north Indian version next time. Never added ginger-garlic or kasoori methi to spinach!
