Khandvi - Gujarat's Famous Farsan SNC- 7

 In Divya's South Vs North Challenge, this month challenge for Southern team is Gujarat's Famous Farsan Khandvi and Challenge for northern team is Shama's Karupatti Appam.

I am a part of southern team, so linking this recipe to Gujarat zaika's Space.Thanks for sharing the  Gujarat traditional delicious recipe..



 INGREDIENTS:
besan flour - 1 cup
sour curd - 1/2 cup
water - 1. 1/2 cup
turmeric - 1/4 tsp
sugar - 1 tsp
salt - to taste.

For tempering:
oil - 1tbsp
mustard seeds - 1 tsp
sesame seeds - 1 tsp
asafoetida - 1/2 - 1 tsp
curry leaves - 10
green chilli chopped - 1
dry red chilli - 1

For garnish:
finely chopped coriander & grated coconut.

Steps to follow:


 Mix together the besan flour,curd,turmeric powder,salt,sugar and water, blend the mixture to smooth batter without lumps.

 Transfer the batter to a non stick pan heat on medium flame,stir continuously for few minutes till it becomes thick.
 Spread spoon of the batter on the surface, wait for few seconds , try to roll out ,then remove the mixture from heat. Clean the marble kitchen counter before this process.
Place the mixture immediately on the marble floor of 2 inches and roll it out.Place all the rolls on the plate.
 Heat oil for tempering add,mustard seeds, sesame seeds when it splutters add asafoetida,chopped green chilli,dry red chilli and curry leaves..
 Sprinkle the tempering over the khandvi rolls and garnish with chopped coriander and grated coconut.
Traditional Delicious Gujarat's famous Khandvi is ready to serve.
