Carrot Halwa / Gaajar Ka Halwa

This delicious beautiful light carrot halwa is the perfect end to a special meal.It can be served either hot or cold.

carrot - half kg
ghee - 3-4 tbsp
milk - half cup
sugar - half cup
poppy seeds - 1-2 tbsp ( optional)
chopped almonds - few
saffron strands - a big pinch
cardamom powder - half - 1tsp

Steps to follow:
Wash, remove the skin and grate the carrots and keep aside.

 In a deep pan heat ghee, put grated carrots and stir for few minutes until  carrots sweet smell comes.
 Then pour milk and stir the carrots let them cook for few minutes.

 Let the milk dry up and leaving the carrots soft.Reduce the flame and put sugar.

 Stir well till sugar dissolves completely.
 Add cardamom powder and saffron strands and mix well. Switch off immediately.

 Transfer the carrot halwa to the plate and garnish with chopped almonds
and roasted poppy seeds( optional).Carrota after cooking reduce a lot so adjust the quantity accordingly.
Yummy carrot halwa is ready to serve.

Serve in an  individual bowls. Enjoy with Briyani, raita & dalcha.

Baked Vegetables

If you like to serve the meals in several courses, you can include this simple rich recipe also. Particularly this vegetable recipe is just suitable for party/ buffet.

mixed cut vegetables and half boiled - 1  cup or  one and half cup
grated cheese - 4 - 5 tbsp
butter - to dot (optional)
salt, pepper and chilli flakes - to taste.

For the White Sauce :
butter - 2 tbsp
maida / flour no 1 - 2 tbsp
milk - 2 cup
salt and pepper to taste.

Steps to follow:

Here I used cauliflower,carrot ,beans,peas,potato and capsicum. Microwave the cut vegetables for 2 minutes to half cook.

For white sauce preparation:
Heat butter  in a sauce pan.

 Add maida / flour no:1  and stir fry it.
 Then add milk, continuously mix well till it becomes thick sauce like..Switch  off the stove..

 Add mixed vegetable to the prepared sauce and mix well.
 Transfer the veg and white  sauce mix into the greased microwave safe glass bowl and sprinkle pepper powder ,chilli flakes to taste and mix well and add  grated cheese and dot with butter (optional)
 Bake / microwave  at medium heat in the oven for 10 minutes or until cheese turns golden brown.

  Serve it hot and add tomato ketchup to enhance the dish.

You can have it simply like that or have it with any type of bread or mix with noodles or pasta.Enjoy the yummy simple rich dish.

Garlic bread with cheese

This extremely popular dish is quick and easy to bake/cook.This dish can be served with starters or as a starter.

long bread or bun- 2
butter - 50 gm cube
minced parsley or coriander - 1-2  tbsp
minced garlic - 1 -2 tbsp
shredded mozaralla cheese - half cup
salt ,white pepper powder - pinch to taste (optional)

Serves - 2

Steps to follow:

 In a bowl add butter,minced garlic and parsley.
 With pinch of salt and pepper  mix well.
 Cut the bread into medium thin slices. Arrange bread slices  in the baking tray.Apply butter mixture on bread  slices with a spoon. You can apply this mixture to 8-10 slices.
 Then spread with shredded cheese.
 Preheat the electric oven to medium. Bake it until done or crisp or at least  bake for 5-7 minutes.
 Carefully transfer from oven to serving basket and serve immediately.
 Yummy healthy Garlic bread with cheese is ready.
This one is crispy garlic bread with cheese.

Gobi Mussallam

This strong flavoured gobi dish has deliciously thick and best served with Rotis or Naan.This curry can be used as a vegetarian main course. Enjoy!

Cauliflower - medium size - 1
half cup tomato puree
oil - 1+2   tbsp
ginger garlic paste - 2 tsp
green chilli -1 
red chilli -1
big onion - 1 sliced
coriander seed - 2 tsp
cumin seed - 2  tsp
garam masala - 1 and half tsp
turmeric powder - half tsp
cinnamon - 1 inch piece
green cardamom - 2
cashew nuts - 6
3-4 tbsp milk
2tbsp grated paneer or cheese or fresh cream ,chopped coriander leaves to garnish
salt - to taste.
Serves - 4
Steps to follow:
Dry roast coriander seeds,cumin seeds,cinnamon,cardamom,cashew nuts for a minute and keep aside.Cool and grind it.
Heat 1 tbsp oil and saute the sliced onion nicely and keep aside.

  Grind onions with blended roasted spices,green &  red chill and ginger garlic paste,then  add little water to make a smooth paste.Boil 2 medium size tomatoes ,cool and puree it.

Now the paste and tomato puree are ready
 Boil the cauliflower florets with enough water and salt for 10 minutes.Drain and keep aside.
 Heat 2 tbsp oil in a vessel, fry the ground paste till the oil separates.
 Add turmeric powder and garam masala.Mix well.
 Add tomato puree.
 Add little water and salt for the needed consistency.Cook the masala for 2 minutes.

Add cooked cauliflower and mix well.
 Slowly  add milk and mix again.Cook altogether for few minutes.Check the salt to taste.
 Garnish with chopped coriander leaves and fresh cream.
Now gobi mussallam is ready to serve.
 Serve with Naan or Rotis.
