Chinese Fried Rice
long grain rice - 1 cup
peanut oil or refined oil - 3 tbsp
chopped big onion - 2 tbsp
thin carrot strips- quarter cup
thin cabbage strips - quarter cup
green peas or beans sprouts- 2 tbsp
capsicum - half
leek small leaf -1
chopped celery -1 tbsp
scrambled egg - 1 (optional)
soy sauce -1 tbsp
tomato sauce - 1-2 tsp
chilli sauce - 1-2 tsp
ajinomotto - quarter tsp(optional)
spring onion - 2
salt - to taste.
Serves - 2 -3
Steps to follow:
Wash rice and soak for 10 minutes.Heat - 1 tbsp oil fry for atleast 1 minute,till all the grains are well coated with oil.Transfer rice to a container and add 1 and half cup water.Pressure cook for 8 -10 minutes.Remove when cool.
Chop onion,spring onion,celery,leeks ,carrots,capsicum,cabbage into thin long strips.
Heat one tsp oil in a skillet,beat the egg with a pinch of salt and pour,quickly stir in high fire and scramble the egg and keep aside.
Heat remaining oil in a skillet saute chopped onion,add leeks,celery and saute.Add other veggies and salt to taste.Stir well.Add soya sauce,chilli sauce and fry well, vegetables should partially cooked.Add ajinomotto(optional) and mix well.
Then add cooked rice,scrambled egg and tomato sauce,mix well.
