Quarter Chicken Tandoori (Grill )

This is considered a most popular Indian / Pakistani Chicken Dish which is cooked in a clay oven called a tandoor, this is extremely popular and appears on majority of restaurant menus.Although the authentic tandoori flavour is very difficult to acheive in electric ovens, this version also still makes a very tasty dish.

Ingredients:
 chicken quarters - 4
fresh thick natural yogurt - 4  tbsp
Tandoori Masala - 4 tsp
chicken soup cube -1
dry kasoori methi  - 1 tbsp
oil - 1tbsp
lemon juice - 1 tbsp
red food colour - pinch.(optional)
salt - to taste

(or if ready made tandoori masala are not available
ginger & garlic pulp - each 1 tsp
garam masala - 1 tsp
chilli powder - 1 and  1/2 tsp
turmeric powder - quarter tsp
coriander powder - 1tsp)
mixed salad leaves and lime to garnish.

Steps to follow:
Rinse and drain the chicken quarters with or without skin.


 Mix together.lemon juice,  yogurt, masala powders and crushed soup cube ( adding soup cube is my special tip)
Then  add red food colour,oil, kasoori methi and salt to taste.Coat well with all chicken quarters till all the ingredients are well combined.

 Cover and leave the chicken quarters to marinate at least for 3 hours.
 Preheat oven to 240 degree.Transfer the chicken pieces to grill plate.
Grill the chicken for 30-40 minutes or until the chicken quarters cooked right and browned evenly on top.

 Remove from oven transfer to serving dish garnish with the salad leaves and lime wedges.
