Healthy Carrot Soup

This light and creamy mild carrot soup is a wonderful warming first course, an appetizing quick meal is delicious for any menu.

medium size carrots roughly chopped -4
chopped onion-1
chopped garlic cloves -2
chopped coriander leaves - 1 tbsp
soup cube -1 
water - 4 cups
oil - 1 tbsp
soya sauce, vinegar (optional)- each half tsp
salt & freshly ground pepper to taste.

Duration  - 20 -30 minutes
Serves - 4

Steps to follow:
Heat  oil in a vessel  or cooker fry garlic & onion until golden colour.
 Add carrots,soup cube and 4 cups of water,chopped coriander, cook on low heat until carrots are tender.

 Blend the mixture until smooth consistency. Transfer to a bowl.

 Add vinegar, soya sauce, freshly ground pepper and add  little salt. Adjust seasoning according to your taste.Mix altogether.
Heat it in an oven for 2 minutes.

Garnish with coriander leaves  Serve immediately. Best combination is brown  bread. I want to serve something healthy to my family So I made this soup.
