Stuffed Tomato Parsley Omelette

This Omelette makes an excellent tiffin at any time of the day and also  very light and nutritious.

 Ingredients:
2 eggs
chopped  medium size tomato -1
chopped parsley - 2 - 3tbsp
chopped  green chilli -1
freshly ground pepper - 2 pinch
a pinch of salt
butter or ghee to fry - 1-2 tsp.

Serves -1 or  2
Steps to follow:

In a bowl   beat the eggs with pinch of salt.
 Add chopped chilli, parsley and tomatoes.
 Mix well.
 In a pan heat ghee or butter.Pour the egg mix  into the pan.Sprinkle freshly ground pepper over it.
 Fold like this, turn and cook till done.


Just serve immediately. Yummy tasty healthy stuffed tomato parsley omelette is ready.Enjoy ! :)
You can have just like that  or with freshly made chappathi or with toasted bread slices.
