Carrot Cup Cakes - My Blog First Anniversary & Cash Gift


Hip Hip Hurray! The 10 th  January is very close to me. On this day, I started this blog with no expectations.But now, it's running successfully for a year.
Thank you friends for all your valuable feedback.
To celebrate this splendid occasion I've made Carrot Cup Cakes.
On this happy occasion I would like to share that I won 20 dollars gift card from Sarasyummybites in her Dec - 2012 Breakfast Event. Thanks Saras. Am very excited.

Now coming to the recipe
Carrot Cup cakes :
Ingredients:
Carrots washed and grated - medium size - 2 (nearly 250 gm)
All purpose flour - 150 gm
raisins - 50 gm
chopped mixed nuts - 50 g
vegetable oil - 100 ml
caster sugar - 1 25 gm
eggs - 3 medium size
orange juice - 100 ml
vanilla extract - 1 tsp
baking powder - 1 tsp
bicarbonate soda - 1/2 tsp
cinnamon powder - half tsp
nutmeg powder - 1/4 - 1/2 tsp
salt - pinch

Duration - 
prepation - 30 minutes
baking - 20-30 minutes.
serves - 10 

Steps to follow -


Get ready with all the ingredients.
 Wash and grate the carrots very finely.
 First for dry mixture, In a large bowl sift flour,baking powder,bicarbonate soda and salt.
 Then to the flour add raisins, chopped nuts, cinnamon powder and nutmeg powder.
 Mix well and keep aside.
 For wet mixture, Beat eggs in a medium size bowl, add vanilla extract and caster sugar.
 Beat until smooth.
 Pour oil gradually and combine together,beating until fluffy.
 Then combine the dry and wet mixture.
 Mix thoroughly.
 Add the orange juice and mix well.
 Add the grated carrots and mix thoroughly.
 Now the final  batter  is ready.
Preheat the oven to 250 degree celcius.
Fill the cup cake liners 1/2 to 3/4 full of batter.
Keep the baking tray in the preheated oven and bake 20-30 minutes or until toothpick inserted in center comes out clean.
 Cool the baked cakes 10 minutes in the pan and then place cup cakes on wire racks to cool completely.
 Wow ! Yummy healthy flavorful  carrot cup cakes are ready to serve.
 Serve with any fresh juice.
