Muttai Idiyappam / Egg Stringhoppers

Left over Idiyappam  or fresh Idiyappam -  6
egg - 3
oil - 3 tbsp
ghee - 1 tsp
chopped onion - 200 gm
chopped tomato - 100 gm
chopped green chilli - 1
ginger garlic paste - 1 tsp
garam masala - quarter tsp
chilli powder - quarter tsp
turmeric powder - quarter tsp
pepper powder - quarter tsp
chopped coriander - 2 tbsp
curry leaves - few
salt - to taste.

Serves - 3.
Steps to follow:
Shred the idiappam. Chop all the veggies and get ready.Beat the egg with pepper powder and salt to taste and keep aside.

In a pan heat oil and add chopped onion and stir until golden colour.Then add gg paste and stir again in a low flame,then add chopped chilli, tomatoes and curry leaves.Add little salt and stir till tomatoes mashed well.Add garam masala, chilli,turmeric powder and stir well.
 Then add beaten eggs to it, in a medium low flame mix well.

When egg gets cooked, add shredded idiyappam. Mix well and keep under low flame for 2 minutes, add chopped coriander and ghee ,mix well  and switch off the stove.

Now the delicious muttai idiyappam is ready to serve.Serve hot.

Akka wat an idea...Super recipe, we can name it Indian egg noodles :) If I start a hotel will add this to my menu :)
