Pumpkin Kheer

yellow pumpkin - 300 gm piece
thick milk - 2 cups 
sweetened condensed milk - 2 tbsp (optional)
sugar - 4-6 tbsp 
chopped nuts - almond,cashew,pistachio- each 1 tbsp
ghee - 1 tbsp
salt - pinch.

Serves -2 - 4
Maximum Cooking time -  30 minutes.

Remove the skin, wash and cut the pumpkin  into small size pieces.

 Pressure cook (2 whistles) the pumpkin pieces with half cup water and the same time boiled the milk.
 Cool it and paste the cooked pumpkin pieces with sugar in a food processor.

 Heat ghee in a vessel add chopped nuts fry till  golden brown.

 Add the cooked pumpkin sugar mixed paste.Mix Well.

Add 1-2 cups thick  milk. Depending upon the thickness you prefer.Stir well.Add pinch salt finally.

 Now the Delicious Pumpkin Kheer is ready .Serve warm or chilled in a bowl.
