Lamb Kebab


Kebabs are now become a favourite Indian dish. Although lamb has a high fat content you still enjoy traditional favourites like kebab if you remove all the excess fats before you starts cooking. Kebabs is cooked in its own juice with few spices and herbs but no other liquid.

Ingredients :
minced lamb - 500 gm
chopped onion  -1
chopped garlic cloves - 2  
chopped fresh  coriander - 1 tbsp
chopped fresh mint leaves - 1 tbsp
chilli flakes - 1tsp
garam masala - half tsp
cumin powder - 1 tsp
coriander powder - 2tsp
pepper powder - half  - 1tsp
salt - to taste
oil - for brushing.

serves - 4

Steps to follow:
Wash  and drain the minced lamb thoroughly.



 In a plate add minced lamb chopped onion,garlic,fresh coriander,mint,garam masala, chilli flakes,coriander,cumin,pepper powder and salt to taste. Mix well  with hands or  put into the blender until the mixture blend together.You can add a tbsp of maida  for binding.
 Divide the lamb mixture into 8 equal portions.Roll each ball into oval shape.Thread on to the wooden or metal skewers, mould into long sausage shapes.
 And brush with oil.
 Preheat the oven. Cook under medium  hot grill for 10 -15  minutes or heat a pan cook skewers for 5 -7 minutes on each side.
 Turning occasionally until brown all over.
 Now the lamb kebabs are ready to serve.

For the raita:
thick fresh yogurt - 100ml
mint leaves chopped - 1 tbsp
salt - to taste.
Blend it together and chill for at least 15 minutes in a refrigerator and serve.


Serve the kebabs on a bed of mixed salad accompanied by raita.
