Idiyappam / Firni / Vattilappam



Idiyappam /String Hoppers
Ingredients:
Roasted raw rice flour - 2 cup
boiling water- - 3 1/2 cups (it may vary)
salt - half tsp
ghee- 1 tsp

Serves 2 - 3

Steps to follow:
In vessel add flour, salt, ghee and boiling water. Mix with the wooden spoon to make a soft dough but not sticky.Keep aside.
Pour 3 cups 0f water in the idili maker or steamer, let it boil.In a idli thattu or idiyappam thattu spread thin wet cloth, Place the prepared dough in the idiyappam mould and press the thin hoppers on the cloth, cover another thattu and repeat the same.Steam for 10 minutes.Cool slightly and transfer the idiyaappam to the serving dish.Repeat with remaining dough.

Now traditional idiyaappam is ready to serve. Serve with Sweetened coconut milk or firni or vattilappam or veg or non veg kurma.


Rava(Sooji) Firni
sooji - 50 gm
sugar - 100 gm
water - half litre
coconut milk - 250 ml
cardamom - 3
cashewnuts - 12
raisins- 12
ghee - 2 - 3 tsp
salt - pinch.

Serves -4

Steps to follow:
In a bowl add sooji and water, Let it slowly boil stir with spoon, add slightly slitted cardamom. When it cooked, add sugar and stir well, add pinch of salt ,then add coconut milk mix well and switch off the stove.
Heat Ghee in a pan add cashew nuts and raisins, fry till golden brown, add to firni.
Now yummy( Sooji) Rava firni is ready to serve.Serve with Idiyaappam. Kids would love to have this.
