Green Chicken Fry

chicken - 1 kg
ginger garlic paste - 2 tsp
garam masala - half tsp
egg - 1
corn flour - 2 tbsp
maida (flour no-1)- 4 tbsp
oil - 1 cup
salt - to taste.

for the paste :
chopped coriander, mint leaves - each 2 tbsp
green chilli - 2-3
curd - 1 tbsp

Steps to follow:
Clean, cut and wash the chicken pieces, then drain the water.

In a bowl add chicken pieces, ginger garlic paste,garam masala, egg, corn flour, maida, coriander,mint chilli paste and salt to taste.
Mix well and marinate for at least 1 hour.

Heat oil in a pan, fry the chicken pieces, until the chicken pieces is cooked.

Cover the chicken pieces with aluminium foil and keep it in the hot pack.When served it will be soft and warm.

Healthy Colourful Noodles

fried noodles - 2 pack( 160 gm)
red, yellow, green capsicum - each half
button mushroom - 3
cabbage - half cup
onion - 1
oil - 1-2 tbsp
light soya sauce - 2tsp
fresh crushed pepper - half -1 tsp
chopped spring onion - 2 tbsp for garnishing.
salt - to taste.

Serves - 2-3
Steps to follow:
Wash and cut the veggies in same size.

Heat oil in a pan then add sliced onion stir for a minute,then add mushoom and capsicum and again stir well until veggies is cooked.Sprinkle little salt to taste.

Add soy sauce and stir well.
Then add the cooked noodles, mix well and add the freshly ground pepper to taste.

Serve garnish with fresh chopped spring onions.

Raw Vegetable Salad

Salads is a fresh, crisp accompaniment to meals.Salads can be made with a wide range of ingredients like combination of vegetables,fruits,cheese, cold meats,poultry and seafood.The ingredients are generally added raw or blanched.Most salads are served chilled,but several are served at room temperature.Arrangement and colour are important for this dish.

I make a salad just like this everyday.
carrot - 1
cucumber - 1
onion- 1
tomato -1
shredded cabbage/ lettuce - 1 cup
small lime -1
salt and pepper- to taste.

Serves - 2

Place cabbage and lettuce on a flat dish.Then arrange sliced carrot, cucumber, onion and finally sliced tomatoes on top.Squeeze the lime, add salt and pepper(optional) to taste.
Healthy Raw Veg Salad is ready to serve.

Blessed Eid in U.A.E / Ramadan Special Harees Recipe

My Eid Feast

Islam being the world's second largest religion, it's no wonder that Eid al Fitr celebrations differ slightly from country to country.In Arabic Eid means "festivity" and "fitr" means breaking the fast.

The U.A.E is a melting pot of nationalities with a blend of cultures and traditions.
When Eid is called, Muslims gather early in the morning in outdoor locations or at the mosque to perform the Eid prayer.The Eid prayer is a short congregational prayer followed by a sermon.After the Eid prayer, it's customery to greet the person sitting on either side of oneself with the common Eid Greeting. For most Emirati's the first day of Eid is exclusively for visiting relatives and family elders.For expatriate Muslims, this often means long distance phone calls.

On the second day of Eid, people tend to go out of their homes,listen to Arabic music,watch traditional dancing or simply having their food with their loved ones.

I think Eid is a Special joyous occasion because we celebrate with our relatives and friends, enjoy some precious moments with closed ones, wearing new clothes,sending greetings to everyone and having delicious foods( I cooked morning idiyaappam firni,mutton kurma, for lunch Briyani, chicken fries,Dalcha, Raitha, Sweets etc..-as shown in picture)

Middle East Special Recipe - Harees - Ramadan Special
broken wheat - 100 gm
minced chicken or minced mutton - 200 gm
ghee - 1-2 tbsp
olive oil - 2 tbsp
roasted cumin powder - 1/4 tsp
roasted cinnamon powder - 1/4 tsp
salt - to taste

Steps to follow:
Soak the broken wheat in water overnight.

Then drain the water before preparing.

In a pressure cooker add soaked wheat, minced chicken/mutton, required water and salt to taste.If you like you can add chopped onion and garlic too.

Cook for at least 45 minutes in a low flame.Cook harees like a porridge.Then add roasted cumin powder& roasted cinnamon powder(optional).Thoroughly mix with the wooden spoon or blend it, until the meat and cooked wheat grains are well mixed.Add ghee and olive oil to the harees.

Serve hot.This is traditionally served in Ramadan and all occasions in U.A.E.

Chicken Dosa

dosai batter - 1 cup
for chicken filling:
finely chopped chicken pieces- 100gm
ginger garlic paste - half tsp
chicken 65 powder- 1 tsp
chopped onion - 1
few chunks of capsicum
oil - 4 tsp
salt - to taste.

Serves - 1

Heat 2 tsp oil in a pan, stir chopped onion and ginger garlic paste.Then add the chopped chicken, stir for a minute.Add chicken 65 masala, capsicum chunks and little salt to taste, Then sprinkle little water and cook well. Now chicken filling is ready.

Heat tawa, spread dosa batter in a round shape, sprinkle a teaspoon of oil and close with lid until the dosa cooked well,then spread with chicken filling preparation.

Fold the dosa, Cut into two pieces and serve hot.Make two dosas like this.
Yummy chicken Dosa is ready to serve.

Umm Ali - Egyptian Dessert

A dessert is a wonderful way to end a meal, this is very delicious egyptian recipe, easy to make.

crossaints - 5
sweetened condensed milk - 250 ml
water - 250 ml
fresh cream - 100 gm
dry coconut powder -2 tbsp
raisins - 2 tbsp
almond,pistachio,cashewnuts - each 3 tbsp
vanilla essence - half tsp

First shred the croossaints and cut the nuts into small pieces.

Place the shredded crossaints, all the nuts, raisins and dry coconut powder in a baking bowl and mix it together.

In a pan pour sweetened condensed milk,vanilla essence and water and bring to boil for few minutes and switch off it.
Then pour the boiled condensed milk over the croissants mix bowl. Mix well.

Then pour fresh cream on top of crossaints mix bowl.

Preheat the oven to 250 degree and bake the umm ali mix uncovered for 20 minutes.

Delicious Umm Ali is ready to serve.

Mix and serve warm or chilled.

Traditionally this dessert is served in U.A.E in all special feast.
