Chicken Pasta

This is very attractive dish,easy to make,full of flavour,quick morning or evening meal.

boneless chicken - 200 gm
pasta - 200 gm
chopped capsicum -1
chopped onion - 1
chicken soup cube - 1
tomato sauce - 1-2 tsp
soya sauce - half tsp
hot sauce - 1 tsp
pepper powder - half tsp
oil - 2 tbsp
salt - to taste.

(Serves 3- 4)

Steps to follow:
chop the capsicum,onion and keep aside. cook the chicken with little water and shred and keep it ready.
Cook the pasta in enough water and salt, drain it.
In a pan heat oil add,chopped onion and chopped capsicum,stir well. Then add cooked shredded chicken and powdered chicken soup cube and again stir well. then add soya sauce,tomato sauce and stir for a minute, Then add cooked pasta , hot sauce and pepper powder.Add little salt to taste.Simmer the stove and mix altogether.
Now the yummy chicken pasta is ready to serve.Serve immediately.

Grilled Tandoori chicken

Most popular Indian/ Pakistani chicken dish which is cooked in clay oven called tandoor ,this is extremely popular in restaurant menus. Although authentic tandoori flavour is very difficult to achieve in ovens anyhow this still makes a very tasty dish.

chicken pieces - 600 gm
fresh yogurt - 2 tbsp
ginger garlic paste - 2 tsp
garam masala - 1/2 tsp
chilli powder - 1 tsp
turmeric powder - 1/4 tsp
coriander powder - 1 tsp
lemon juice - 1 tbsp
red food colour - pinch
oil - 1 tbsp
salt - 1 tsp( to taste).

(Serves - 4)

Rinse well and drain the chicken pieces. Mix together the yogurt,ginger garlic paste, garam masala, turmeric,chilli,coriander powders,lemon juice,red colour and oil, mix well so that all the ingredients are well combined.Then add the chicken pieces to the spice mixture and leave to marinate for 3-4 hours.

Pre heat the gas oven to 250 degree.Transfer the chicken pieces to the grill plate or tray.Grill the chicken in the oven for 30 minutes until the chicken evenly browned on top.Remove from oven, transfer to serving dish.

Garnish with salads and serve with rice or naan.

Chicken Yam Gravy

This dish is equally delicious whether served with plain rice or chappathis.This is simple dish with the addition of Indian spices.

Ingredients :
chicken pieces- 300 gm
yam - 300 gm ( peeled and cut into chunks)
ginger garlic paste - 2 tsp
garam masala -quarter - half tsp
yogurt - 1tbsp
chilly powder -half - 1 tsp
turmeric powder - 1/4 + 1/4 tsp
coriander powder - 2 tsp
cumin powder - half tsp
tomato - 100 gm
onion - 100gm
slitted green chilli - 1
chopped fresh coriander - 2 tbsp
coconut paste - 3 tbsp or coconut milk - 1 cup
oil - 3 tbsp
salt - to taste

Steps to follow:
Wash and peel the yam and cut into chunks and cook with quarter tsp turmeric and enough water and drain it.
Clean, wash the chicken pieces and marinate with quarter tsp turmeric powder, yogurt and salt to taste.

Heat oil in a pan, add onion slices, stir , add ginger garlic paste and again stir well.Then add chopped tomatoes, chopped coriander,green chilli and saute well.Then add all the masala powders and marinated chicken pieces mix well and cook for 15 minutes until the chicken pieces are tender.

Then add cooked yam pieces and a cup of water let it boil for 5 minutes. Add little salt to taste.

Add coconut paste, bring to boil, cover and simmer for 5 minutes.
Now the Chicken yam gravy is ready to serve.This gravy is absolutely delicious serve with hot steamed rice or chapathi.

Palak Paneer

A mildly spiced dish using a popular combination of spinach and paneer.

paneer - 150 gm
palak - 100 gm
onion - 1
cardamom - 2 (optional)
ginger garlic paste - 1 tsp
garlic clove - 2
green chilli - 2
ghee or oil - 4 tsp
salt- to taste

(serves - 3)

Steps to follow:
Clean and wash the palak leaves and drain the water. Chop the onion, tomato,garlic,green chilli and keep aside.Wash the paneer cubes in chill water and keep aside.

In a pan heat 1 tsp ghee, add ginger garlic paste stir fry and add palak leaves and again stir for a minute.
Then paste the palak in the blender.
Heat pan add 3 tsp ghee or oil add,cardamom,then add chopped garlic,onion,green chilli, tomato and stir well,then add the palak paste and salt to taste, stir for a minute, then add the washed paneer cubes. Mix well and let it stand for 2 minute in a medium low flame.Switch off the stove.

Tasty healthy Palak Paneer is ready to serve. Serve with Naan ,chappathi or Parota.

Apple Smoothie

You are well aware of the saying "an apple a day keeps the doctor away", right?

Apples are packed with nutrients and provide plenty of health benefits that kids and parents can both enjoy.One medium apple with the skin contains only 95 calories.

Apples are packed with vitamins A, B-1, B-2 and C, as well as minerals such as calcium, potassium, iodine, iron and phosphorous. These nutrients are essential to your child's growing body, particularly in the bones, tissues, muscles organs, skin and blood.

Apples, along with all other fruits and vegetables, are a good source of fiber. Fiber plays a very important role
in digestion. Fiber provides bulk to stool, which stimulates the activity of the intestines, and promotes regular bowel activity.

It is very important to feed your children four servings of fruits per day as it is, and apples can help to fill up those requirement.

apple - 1
milk - half cup
sweetened condensed milk - 1 tbsp
vanilla essence - 2 drop

( serves- 1)
Peel and chop the apple . In a blender add all ingredients and blend until smooth.

Yummy Apple Smoothie is ready. Serve immediately .

My daughter couldn't wait for an another second to taste it. Before I could taste it myself the glass is empty. This smoothie fills up the kids little tummy and also so tasty. 

Strawberry Banana Smoothie.

fresh ripen strawberry - 3
banana - half
milk - half cup
sugar - 2 tsp
vanilla essence - 2 drops(optional)

(Serves- 1)
Slice strawberries and banana, Add all ingredients in a blender.Blend until smooth.

Garnish with strawberry slice and serve immediately.

Paneer Dosa

Dosa and paneer is rather an unusual combination,but Shredded paneer works very well in this recipe.


chopped or shredded paneer - 50 gm

chopped onion - 50 gm

chopped ginger - half tsp

chilli powder - quarter tsp

chopped coriander leaves - 1 tbsp

oil - 3 tsp

salt - to taste

dosa batter - half - one cup

(Serves - 1)

Steps to follow:

Chop the paneer.

In a pan heat 2 tsp oil add chopped onion,ginger and stir for a minute.Then add chopped paneer, chillie powder and little salt to taste and again stir for a minute. Then add chopped coriander leaves and switch off the stove.

Heat tawa and spread a spoonful of dosa batter in a round shape, sprinkle little oil and close with lid until the dosa cooked well, spread it with paneer mix.

Fold like this. Turn and cook for a minute in sim fire. Now the tasty paneer dosa is ready to serve. Serve hot with chutnies and sambar.It tastes good just like that also.

Murgh Mutter Paneer

This curry has a nice thick sauce can be served either with chappathis or plain rice.This dish provides a good source of protien.

chicken - 150 gm
frozen or fresh peas- half cup
paneer - 100 gm
ginger garlic paste - 1tsp
fresh yogurt - 1 tbsp
tomato sauce - 2 tsp
chilli powder - half-1 tsp ( as per taste)
coriander powder - 1tsp
turmeric powder- quarter tsp
cinnamon - 1 small piece
cardamom - 3
slitted green chilli - 1
chopped corainder leaves- 2 tbsp
oil- 1 tbsp
salt - to taste.
(Serves- 2-3 )

In a bowl add ginger garlic paste,cardamom,cinnamon, chilli,turmeric,coriander powders,yogurt,tomato sauce,salt and mix well.

In a pan heat oil add, the masala paste and slitted green chilli, stir well then add cleaned cut chicken pieces and let it cook for five minutes.

Then add peas and cook for another five- 10 minutes.Close the lid and cook in medium flame.

Then add the paneer cubes, mix well and sprinkle little water , cook for another 5-7 minutes.

Add chopped coriander and stir well and switch off the flame.

Serve garnish with chopped corainder leaves. Wow!!! This is an unusual combo,but it really tastes well. Serve with fried rice,plain rice, chappathi,naan and bread.
