Oven Roast Whole Chicken

whole chicken - 1000 gm
turmeric powder - 1 tsp

For marination :
crushed chicken soup cube -  2
pepper & cumin powder - each half tsp
chilli powder - 1 tsp
ginger garlic paste - 2tsp
coriander leaf paste or kasoori methi powder - 1 tbsp(optional)
lemon juice  from  1 big size lemon 
salt - if needed (salt is in the soup cube)

Steps to follow:

 Mix the marination in a bowl and keep aside.

 Clean and wash the chicken thoroughly, make few slits on the chicken  and soak it  in the turmeric water for 15 minutes.

 Completely drain the water.
 Apply the marination to the whole chicken. You can keep squeezed lemon wedges inside the chicken for the good flavour. Marinate the chicken in the refrigerator for 4 hrs.
Then  keep the marinated chicken in the roast rack or in the baking tray with  aluminium foil..Preheat the oven to 250 degree. Cook slowly  for 45 minutes -1 hour .

After completely cooked, carefully transfer the roasted chicken from the oven to the tray.Cover with aluminium foil and keep aside for another 15 minutes.

  Then quarter or half  cut the chicken and serve hot with your favourite side dish.

Wow ! Delicious Healthy Chicken Roast is ready to serve.
Serve with kubus,hummus,muthabal and pickles.

Puttu & Idiyappam (Steamed rice flour / String hoppers)

ready made puttu flour( or Roast red rice flour) - 1 cup
grated coconut - 3-4  tbsp
water - 50 ml
ghee to mix - 1 tsp
salt- 2 pinch

ready made idiyappam flour ( roasted raw rice flour) - 1 cup
hot water - 3oo ml
salt - 2 pinch
to grease oil /ghee - 1 tsp

To Serve need fresh coconut milk,sugar and banana.

Serves - 2 persons.
Duration - 20-30 minutes.

Puttu / Steamed rice flour
Steps to follow:
 In a bowl add flour ,little salt and required water and mix well. Flour absorb the water and it becomes soft shredded flour.
Then add the flour in the greased puttu maker  ,then grated coconut and then puttu flour and close the lid.
Steam it for 10 minutes.
Then turn the puttu maker,  take the   puttu gently from Puttu kuzhal.

Mix puttu with ghee serve immediately with sweetened coconut milk and banana.


Add  flour in a bowl, little salt, boiling water and mix with a wooden spoon  to make a soft but not sticky dough.
Grease the idli / idiyappam stand with little oil or ghee.

Place the prepared dough in a sev (idiyappam ) mould and press a thin layer of hoppers on the idli or idiyappam stand.
 Cover and steam it for 10 minutes in a steamer or Idli vessel.
Cool slightly and transfer to a serving dish.
Serve with fresh coconut milk,sugar and banana.
Both Puttu and Idiyappam are healthy breakfast. Enjoy with sweetened fresh coconut milk and bananas.

Kaara Bombay Toast / Spicy Bombay Toast

Ingredients :
bread slices(medium) - 4
egg - 2
onion (medium)- 1
green chilli (medium) - 1
ginger garlic paste - half tsp
chopped coriander - 1 tbsp
salt & pepper - to taste
ghee &oil mix - 2 tbsp.

Serves - 1-2
Duration - 15 minutes.

Steps to follow:
Cut the edges of the bread slices. Paste the onion,green chilli and coriander leaves and keep aside.

In a bowl add onion,green chilli,coriander paste, eggs, ginger garlic paste and salt & pepper to taste.

Mix well. Dip the bread slices one by one.
Heat oil ghee mix in a pan and toast the dipped bread slices to golden brown in a medium low flame.

Now the yummy healthy spicy bread toast is ready to serve. Serve simply or with chilli garlic tomato sauce.
Oh..instead of knife I kept spoon...:) ! Adjust...

Muttai Idiyappam / Egg Stringhoppers

Left over Idiyappam  or fresh Idiyappam -  6
egg - 3
oil - 3 tbsp
ghee - 1 tsp
chopped onion - 200 gm
chopped tomato - 100 gm
chopped green chilli - 1
ginger garlic paste - 1 tsp
garam masala - quarter tsp
chilli powder - quarter tsp
turmeric powder - quarter tsp
pepper powder - quarter tsp
chopped coriander - 2 tbsp
curry leaves - few
salt - to taste.

Serves - 3.
Steps to follow:
Shred the idiappam. Chop all the veggies and get ready.Beat the egg with pepper powder and salt to taste and keep aside.

In a pan heat oil and add chopped onion and stir until golden colour.Then add gg paste and stir again in a low flame,then add chopped chilli, tomatoes and curry leaves.Add little salt and stir till tomatoes mashed well.Add garam masala, chilli,turmeric powder and stir well.
 Then add beaten eggs to it, in a medium low flame mix well.

When egg gets cooked, add shredded idiyappam. Mix well and keep under low flame for 2 minutes, add chopped coriander and ghee ,mix well  and switch off the stove.

Now the delicious muttai idiyappam is ready to serve.Serve hot.

Easy Chicken Tikka

Chicken is a choice for a  healthy diet as it is low in fat and if you cut off all the skin  before cooking you will reduce the fat content of the dish.

 Ingredients :
Boneless Tender chicken - 600gm
Chicken Tikka  BBQ Mix- 3 tsp
(Shan or any brand)
Dried kasoori methi  - 1 tbsp
Ginger garlic paste - 1 tbsp
Fresh thick yogurt - 2 tbsp
Lime juice - 1 tbsp
Oil -  1 tbsp
Salt - to taste
Butter - 10 gm cube (to apply finally)

Steps to follow:
Cut the chicken pieces into 2 inch cube size.Wash  and drain it.
Mix all the ingredients except butter.Apply evenly on the chicken pieces .Marinate for 1-2 hours.
Preheat the oven. Put each chicken pieces on the skewer and place it in the grill plate on medium heat.Grill evenly on each side until very light brown.
Apply butter on the grilled chicken tikka and serve hot.

Soak the wooden skewers in cold water before using to prevent them from burning while under the grill.
Serving Suggestion : Garnish with Onion slices and lime wedges or Serve simply with cool cucumber raita and flavoured rice.

Fruit Custard

A beautiful and colourful fruit salad to serve as a refreshing starter or to round off a good meal and You know no party meal would be complete without  desserts.

thick fresh milk - 500 ml
custard powder (vanilla flavoured )- 2 tbsp full
if it is not flavoured use half tsp vanilla essence.
sugar - 5 tbsp or 2 tbsp sweetened condensed milk.
fresh fruits such as -
(medium size apple & mango - each 1, banana - 1, green & black grapes,sliced pine apple -each half cup)
or fruits of your choice.
Serves 4.
Steps to Follow:

Mix the custard powder in half cup water and keep aside. Boil the milk.Mix sugar or sweetened condensed milk. Switch off the stove,  when it is hot pour the custard mix to the hot milk. Mix well and keep aside.Cool and refrigerate.

Remove the skins of apple,mango and banana and slice uniformly.Remove the seeds of grapes and slice it also.
Loosen the custard, mix with sliced fruits and serve immediately .
